Eiscafè Arcobaleno opened in 1990 by Aurora Perenzin and her husband Matthias Rütter, is now a renowned gelato shop in Münsterland, a few kilometres from the Dutch border. Regionality and sustainability is the combination that has made Aurora's gelato famous, e.g. with flavours such as Apfel Crumble or Cognac with plum jam. Regionality: thanks to the commitment and cooperation with a network of small local farms, the supply of local, organic products is guaranteed, from elder flowers and berries to all seasonal fruit to make fresh gelato and home made jams. While the herbs used for variegates and decorations, such as mint, rosemary, basil, verbena are grown in the home garden. Sustainability: a new large gelato labor with a spacious workspace for preparing also gelato in cups for vending machines was recently built in an old mill. This project in compliance with environmental regulations required large investments; moreover the mill was previously restored for this purpose. For instance in the area of the mill, a large cistern has been buried in which the cooling water of the machinery is collected and recirculated, in order not to waste this important resource.
